I’ve noticed that holiday weekends like 4th of July, Labor Day and Memorial Day are getting more and more popular for weddings in the NY area, especially for couples’ whose families are from out of town- it combines a vacation with wedding celebrations. So, with the 4th of July coming up, I thought what better than to inspire our palletes with an Americana Menu as interpreted by Chef Rossi of the Raging Skillet.
Mayra and I have been working with Rossi, as we call her, since we were practically still in training pants, so to speak. (Actually, I’d call those training black dresses). We love her for her fabulous personality and her thoughtful menus and this Americana Supper didn’t dissappoint! Hoping your mouth is watering…. I’d offer up some food porn, but instead I only have pictures of us with the Chef. Food porn forth coming though…..

Passed hors d’oeuvres
Baby mac and cheese in parmesan cups
Crispy chicken fritters with sweet and tangy barbecue sauce
Grilled shrimp with Creole cocktail sauce
Grilled pear and herb goat cheese on baby waffles
Oyster shots with mignonette
Chili dusted tuna on jicama with cucumber relish
Mini Cheeseburger “sliders”
three bean vege chili in corn cups with Cheetoh garnish
Supper
All day barbecued brisket in whiskey, molasses and Pepsi
Cajun crusted sea bass with low-country aioli
Seven-vegetable-jambalaya
Southern salad wit h baby greens, local tomatoes and toasted pecans in honey lime dressing
Barbecued sweet corn and baby squash in fresh thyme
Blue Ribbon Cole slaw in raspberry dressing
Jalapeno Corn bread, raisin walnut rolls and cheddar biscuits with sweet butter
Coffee and tea Station
Rice Krispy treats
Baby lemon meringue pies
Deep-dish brownies
Baby Strawberry Shortcakes
Home-style cookies to include oatmeal raisin, chocolate chip and peanut butter
